Until recently, no guarantees were available for packaged grated cheese as far as the quantity of starch or the
absence of non-milkfat is concerned.
Things have changed.
For grated cheese, a seal of approval has been introduced. The cheese companies affiliated with this scheme – and
consequently authorized to use the logo “Grated Cheese Quality Controlled” on their packaging – offer customers an
objective quarantee that a package of grated cheese really does contain what it says on the packet.
The affiliated cheese companies are inspected at regular intervals. These inspections focus on the quantity of
starch in the declaration of ingredients, and on the absence of non-milkfats (such as vegetable fat).
Starch needs to be added to ensure that the grated cheese retains its free-flowing properties. The quantity required
depends on the type of cheese.
Self-evidently an excessive amounts of starch may not be added; otherwise customers would unwittingly be buying
a cheese/starch mixture.
In addition, higher levels of starch are detrimental to the flavour and the further processing
of the product.
Grated cheese cannot contain fat other than milkfat.
It is virtually impossible to see whether the product contains excessive starch or non-milkfat, and consequently
the seal of approval "Grated Cheese Quality Controlled" now offers buyers a guarantee that they really are
buying cheese!
